Cocktail Hour is Back. Here’s How To Do It Right!

Big news: cocktail hour is back. So, take a little inspiration from the ever-stylish Stanley Tucci and lean all the way in on the pre-dinner drink to impress at your next dinner party.

Sure, classics like the negroni and martini are solid choices, but why not impress your crew with something totally new? We’ve got you covered with two delightful pre-dinner drink recipes that your guests probably haven’t tried before. And, of course, we’ve got the perfect snacks to go along with them.

Fig & Ginger Gin Cocktail

Cocktail Ingredients (serves 2)

120mL Archie Rose Signature Dry Gin
45mL ginger syrup 
15mL fresh lime juice
3-4 fresh figs
120mL Sodasmith Tasmanian Lime Soda Water Can 
2 cups Crushed ice
4-5 ice cubes
Fig and thyme to garnish

Ginger Syrup Ingredients

½ cup sugar 
½ cup peeled and diced ginger root
½ cup water

Ginger Syrup Method

1. Combine sugar, diced ginger root and water in a blender.

2. Pour through a fine mesh strainer into a storage jar and store in the fridge for up to 3 weeks.

Cocktail Method

1. Muddle the figs in a cocktail shaker. Add ice cubes, ginger syrup, lime and gin and shake well for 5-8 seconds.

2. Pour the mix over a tea strainer into cocktail glasses filled with crushed ice, ensuring a double strain.

3. Top it off with soda, and garnish with a fig and a sprig of thyme.

Serve with: Roasted figs with goat’s cheese & honey, a light salty-sweet snack that you can sprinkle with pistachios or walnuts for a bit of crunch.

Easy to make in under 10 minutes!

While it looks like a show-stopper, this scone recipe is super easy to make. Whether you’re dishing up a feast to impress, or after a simple snack for a low-key gathering, this scone recipe with cheese and chive won’t disappoint.

Simply top Bakers Delight Cheese & Chive scones with crème fraiche, smoked salmon, ribbons of cucumber and salt & pepper. Then, serve it up with fresh lemon for a refreshing tangy treat. The only problem you’ll have is making sure there’s enough for leftovers.

Prep - 10 mins, Serves - 2, Difficulty - Easy

Ingredients

2 Bakers Delight Cheese & Chive Scones
4 tbsp of crème fraiche
2 Lebanese cucumbers
100g sliced smoked salmon
Lemon wedges to serve
Salt & pepper to season

Method

STEP 1

Using a vegetable peeler, create large ribbons of cucumber, using both cucumbers

STEP 2

Cut both Bakers Delight Cheese & Chive Scones in half

STEP 3

On the bottom half of each scone, layer 2 tbsp of crème fraiche, slices of smoked salmon, ribbons of cucumber and salt & pepper. Replace the top of the scone on top of the fillings and serve immediately with a wedge of fresh lemon

Prep 5 mins - Cooking 15 mins - Serves 4

Win the weeknight with this simple, comforting recipe for a dinner classic: satay chicken! Pump up the flavour with fresh vegetables and an easy, creamy sauce.

Ingredients

500g chicken breasts fillets, coarsely chopped

2 tbs mild curry powder

1 tbs Woolworths peanut oil

2 cloves garlic, crushed

1 red onion, halved, cut into wedges

1/3 cup Woolworths smooth peanut butter

400ml coconut milk

2 packets thick dried rice noodles 200g

1 head broccoli, cut into florets

1/4 bunch coriander, sprigs picked

1 long red chilli, sliced

Method

Step 1

Place chicken in a large bowl. Add curry powder, oil and garlic and mix well. Heat a large deep non-stick frying pan over medium-high heat. Add chicken and cook, stirring occasionally, for 5 minutes or until chicken is browned and almost cooked through. Transfer to a bowl.

Step 2

Add onion to the same pan and cook, stirring, for 2 minutes or until softened slightly. Return the chicken mixture to the pan and stir to combine. Whisk peanut butter, coconut milk and 1/4 cup warm water in a jug. Add to chicken. Bring to the boil. Reduce heat and simmer for 4-5 minutes or until chicken is cooked and sauce has reduced slightly.
Step 3

Place noodles in a large heatproof bowl. Cover with boiling water. Stand for 5 minutes or until softened, adding broccoli in the last 2 minutes of standing. Stir with a fork to separate the noodles. Drain. Spoon noodles into bowls. Top with chicken satay and broccoli. Serve sprinkled with coriander and chilli.

Butter Chicken Bake

An affordable, Indian-inspired dish that combines the rich, creamy flavours of butter chicken with the comfort of a hearty bake from Woolworths

serves 4

Ingredients

• 1/3 bunch coriander

• 1.1kg Woolworths chicken drumsticks, scored

• 3/4 cup butter chicken paste

• 3 cups Woolworths basmati rice

• 1 brown onion, halved, sliced

• 400mL coconut cream

• 400g Woolworths Italian diced tomatoes

• 2 cups Woolworths frozen baby peas

• 1 cup Woolworths Greek-style natural yoghurt

Method

1. Preheat oven to 200°C/180°C fan-forced. Place 4 x 1L (4-cup) rectangular ovenproof baking dishes on a baking tray. Remove leaves from coriander stems. Finely chop coriander stems. Reserve leaves. Place chicken in a large bowl. Add chopped stems and ½ cup paste. Mix well to evenly coat.

2. Divide rice and onion equally among prepared dishes. Place 2 chicken drumsticks in each dish. Whisk cream, tomato, 2 cups water and remaining paste in a jug. Pour cream mixture over chicken. Cover tightly with foil and bake for 55 minutes or until chicken is cooked, rice is tender and liquid has been absorbed, adding peas during the last 10 minutes of cooking

3. Serve butter chicken topped with yoghurt and reserved coriander.
