Win the weeknight with this simple, comforting recipe for a dinner classic: satay chicken! Pump up the flavour with fresh vegetables and an easy, creamy sauce.
Ingredients
500g chicken breasts fillets, coarsely chopped
2 tbs mild curry powder
1 tbs Woolworths peanut oil
2 cloves garlic, crushed
1 red onion, halved, cut into wedges
1/3 cup Woolworths smooth peanut butter
400ml coconut milk
2 packets thick dried rice noodles 200g
1 head broccoli, cut into florets
1/4 bunch coriander, sprigs picked
1 long red chilli, sliced
Method
Step 1
Place chicken in a large bowl. Add curry powder, oil and garlic and mix well. Heat a large deep non-stick frying pan over medium-high heat. Add chicken and cook, stirring occasionally, for 5 minutes or until chicken is browned and almost cooked through. Transfer to a bowl.
Step 2
Add onion to the same pan and cook, stirring, for 2 minutes or until softened slightly. Return the chicken mixture to the pan and stir to combine. Whisk peanut butter, coconut milk and 1/4 cup warm water in a jug. Add to chicken. Bring to the boil. Reduce heat and simmer for 4-5 minutes or until chicken is cooked and sauce has reduced slightly.
Step 3
Place noodles in a large heatproof bowl. Cover with boiling water. Stand for 5 minutes or until softened, adding broccoli in the last 2 minutes of standing. Stir with a fork to separate the noodles. Drain. Spoon noodles into bowls. Top with chicken satay and broccoli. Serve sprinkled with coriander and chilli.
