CELEBRATE CHRISTMAS
Give your Christmas spread a healthier twist with this summery wreath. Bocconcini, melon and cherry tomato marry together in a fresh flavour explosion.
Ingredients
1 tbs extra virgin olive oil
2 tsp balsamic vinegar
1/2 rockmelon, deseeded
1/4 small watermelon
250g cherry tomatoes, quartered
220g Woolworths cherry bocconcini, drained
1/2 bunch radish, thinly sliced
1/4 bunch basil, leaves picked
Method
1. Place oil in a small bowl and gradually whisk in vinegar until combined. Season with pepper. Set aside until required.
2. Using a melon baller, scoop melon flesh into balls.
3. Arrange melon balls, tomato, bocconcini, radish and basil in a wreath shape on a 24cm round-rimmed plate. Serve drizzled with dressing.
